Cook the Pasta

Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve about 1 cup of pasta water before draining.
Sauté the Mushrooms

While the pasta is cooking, heat olive oil in a large skillet or pan over medium-high heat. Add the mushrooms and cook, stirring occasionally, until they have released their moisture and started to brown, about 5-7 minutes. Do not overcrowd the pan; cook in batches if necessary.
Create the Sauce Base

Add the minced garlic to the skillet and cook for another minute until fragrant. Pour in the white wine to deglaze the pan, scraping up any browned bits from the bottom. Let it simmer for 1-2 minutes, until the wine has reduced by about half.

Combine and Serve
